Indian Chinese is one of the best inventions ever. Use of different sauces impart unique taste and aroma. I miss Mumbai food so much but most of all I crave Chinese! Seeing photos of those dishes make me drool! Dried noodles and schezwan sauce served as ‘Timepass‘ was the best part when we used to wait for the order. So many memories!! Coming to the dish, Veg Fried Rice is a quick and easy recipe of Indian Chinese Rice variety. The rice is cooked with variety of vegetables and seasoned with sauces. Common sauces used in Indian Chinese recipes are Soy Sauce, Red Chili Sauce, Tomato Chili Sauce, Vinegar etc.

I use Basmati Rice to make Fried rice because of it’s texture. Generally I make fresh rice and mix with veggies so the grains are separated and it doesn’t become mushy. But leftover rice works well too.

A wide, deep pan called Wok is used to prepare Chinese dishes. Due to it’s shape and size, everything is cooked quickly on high heat. This process imparts required taste and texture to the food.

We cook this often with available and seasonal veggies. Vegetables like carrots, cabbage, green beans and bell pepper are commonly used. Apart from these, you can add peas, broccoli, corn etc. for variation. It is important to cook veggies on high heat until they are tender but crunchy.

Although Fried Rice can be enjoyed as is, some of the popular side dishes are Chili Paneer, Veg Manchurian, Gobi Manchurian etc. When Schezwan sauce is added, it becomes Schezwan Fried Rice. I will be posting the recipes for these side dishes soon.

Step By Step Recipe of Veg Fried Rice:

  • We need below ingredients to make this recipe.
  • Wash and soak 1 cup Basmati Rice for 20-30 minutes.
  • Meanwhile chop all the veggies as shown above.
  • After 30 minutes, drain the water from soaked rice and wash.
  • Add 5-6 cups of water in a big pot. Add 1/2 tsp salt and 1 tsp oil. Bring it to boil.
  • Add rice and boil for 10 minutes or until 90% cooked.
  • As soon as it’s cooked, discard water using strainer. Pour cold water on the rice to stop cooking process. Use fork to fluff the rice.
  • Heat oil in a wok. Add finely chopped onion, ginger garlic paste.
  • Saute and then add white part of spring onion. Cook on high heat.
  • Add cabbage. Mix well and saute.
  • Later add remaining veggies such as capsicum, green beans and carrots. Saute on high heat.
  • Once veggies are tender, add vinegar, soy sauce, tomato chili sauce and little bit of salt.
  • Mix well, saute and cook on high heat.
  • Add freshly cooked rice.
  • Combine everything gently without breaking rice grains.
  • Sprinkle finely chopped spring onion greens. Serve hot.

Ingredients
  • 2 tbsp Oil
  • 1 cup Cabbage chopped
  • 1 Onion finely chopped
  • 1 Carrot finely chopped squares
  • 1/4 Capsicum finely chopped
  • 7-8 Green Beans chopped
  • ½ tbsp Ginger Garlic Paste
  • 1 tsp Vinegar
  • 2 tsp Soya Sauce
  • ½ tbsp Chili Sauce
  • ½ tbsp Tomato Sauce
  • 1-2 Spring Onion Greens finely chopped
  • Salt per taste
For Cooking Rice
  • 1¼ cup Basmati Rice washed and soaked
  • 5-6 cups Water
  • ½ tsp Salt
  • 1 tsp Oil
