Batata Phodi is a Konkani name for shallow fried potato slices. Batata means Potato and Phodi means slices of vegetables that are shallow fried. Some dishes in Konkani cuisine are fairly easy to make and yet taste yummy. 

We prepare Phodis of vegetables like drumsticks, bitter gourd, raw banana, raw jackfruit, eggplant etc. These are very simple to make and can serve as a quick snack or side dish.

The recipe is quite straight forward. These hot and crispy phodis are served with sheeth (rice) and daalithoy (konkani Daal) or Tomato Saar (Thin Tomato Soup).

Ingredients
  • 1-2 Potatoes
  • 2 tbsp Oil
  • 1 cup Semolina
  • 1 tsp Turmeric
  • 2 tsp Chilly powder
  • Salt as per taste
How-To
  1. Peel the potatoes and make medium round/oval size slices. Keep these slices in a bowl of water.

  2. In another bowl, mix semolina, turmeric, chilli powder and salt.

  3. Now heat the griddle. Once hot, pour little oil.

  4. Coat each potato slice in semolina mixture and place on the griddle.

  5. Press the slices lightly using spatula. Pour some drops of oil around each slice if needed. 

  6. Once they start browning from one side, turn the slices.

  7. Once cooked, remove from the griddle and serve hot with rice, daal or tomato saar. You can also munch on these as is.

Step by Step Recipe of Batata Phodi :

  • Peel the potatoes and make oval thin/medium slices. Keep these slices in a bowl of water.
  • In another bowl, mix semolina, turmeric, red chili powder and salt.
  • Coat each potato slice nicely in semolina mixture.
  • Place the coated potato slices on the heated griddle. Pour drops of oil around them.
  • Press the slices lightly using spatula. Cook from one side and then flip them. Shallow fry until they become nice and crispy. Remove from the griddle and serve hot.
  • You can serve these as a side dish with rice and daalithoy (Konkani Daal) or tomato saaru (Tomato soup with tempering).
