Idly Fry or Masala Idli is a quick stir fry made with fresh or leftover idli pieces. It’s tastes fantastic and moreover it’s extremely easy to make. Although there is no hard and fast rule that it needs to be cooked this way, this is simply how I make it. I will tell you about the variations later in the post.

Idli is a popular South Indian breakfast snack. These are steamed discs of a fermented batter made with Idli Rava and Urad Dal. In some places, Idli rava is replaced with simple rice. There are so many varieties of Idli itself but I will keep those for my Idli post πŸ™‚ Coming back to Masala Idli, a simple tempering is prepared with mustard seeds and curry leaves. Other than this, onions, green chili, red chili powder, idli podi etc are added as per liking. I keep it simple though.

Leftovers Idlis tend to become hard and dense, so best way to utilize them is to make Idli Fry. It’s loved by all ages as it’s chatpata and requires no side. Do check out another simple yet yummy recipe with leftover pav – Masala Pav.

Step by Step Recipe of Idli Fry / Masala Idli:

  • We need below ingredients.
  • Heat oil in a pan. Once hot, add mustard seeds. Let them crackle. Then add curry leaves and green chili ginger paste.
  • Now add turmeric, red chili powder, salt and sugar.
  • Quickly add Idli pieces and toss. Make sure to coat all the pieces.
  • Saute for a minute. Sprinkle chopped coriander leaves and combine well.
  • Serve with hot tea.

Ingredients
  • 12-14 Steamed Idlis chopped into small pieces
  • 1 tbsp Oil
  • 10-12 Curry leaves
  • ΒΌ tsp Ginger Green Chili Paste
  • β…› tsp Asafoetida
  • β…› tsp Mustard Seeds
  • Β½ tsp Sugar
  • 1-2 tbsp Coriander leaves
  • Salt to taste
How-To
  1. Chop steamed idlis into small pieces.

  2. Heat oil in a pan. Once hot, add mustard seeds, let them crackle. Add curry leaves and ginger green chili paste.

  3. Now add turmeric, red chili powder, sugar and salt.

  4. Add chopped idli pieces and toss quickly, Saute for minute,

  5. Add chopped coriander leaves and mix well.

  6. Serve with hot tea.

Recipe Notes
  • You can also add chopped onion if you like.
  • You can skip green chili if desired.
