I am not fond of Bitter Gourd (Karle) but it has many health benefits. Also my FIL has diabetes and bitter gourd supposedly helps with keeping sugar in check. So we regularly use bitter gourd in our meals and prepare dishes such as Karate sasam and shallow fried slices. Bitter Gourd Shallow Fry (Karlyache Kaap) is a simple to make shallow fried, spiced bitter gourd slices.

Some people soak these slices in salt water to remove bitterness. But per my MIL, it should be eaten as is so we skip this step. Rest of the recipe is very simple to make.

Step by Step Recipe of Bitter Gourd Shallow Fry:

  • We need below ingredients.
  • Apply salt and red chili powder to slices. Keep aside for 10 minutes.
  • Now coat the slices with semolina. Heat the griddle and keep slices one by one. Shallow fry until brown from one side by adding few drops of oil.
  • Once cooked from one side, flip them and cook by applying little more oil.
  • Remove from heat once cooked and serve.

Bitter Gourd Shallow Fry is a shallow fried, spiced

Ingredients
  • 1 Bitter Gourd thinly sliced
  • 1 tbsp Red Chili Powder
  • 1 tsp Salt
  • 1/4 cup Semolina
  • 1 tbsp Oil
How-To
  1. Wash bitter gourd and cut into thin round slices.

  2. Apply salt and red chili powder and keep aside.

  3. Heat griddle on medium heat.

  4. Coat the slices in semolina and shallow fry on griddle with few drops of oil.

  5. Once cooked from one side, flip them and cook again until brown and crispy.

  6. Serve as a side dish with rice.
