If you are following my blog, you know my love for Indo-Chinese Dishes. Veg Schezwan Noodles are stir fried noodles with veggies and sauces, primary being Schezwan Sauce! It’s too yummy to resist.

Just like Veg Fried Rice recipe I shared earlier, this too is cooked on high heat in a Wok. You can use any veggies of your choice. I mostly use bell pepper, carrot and cabbage. Chili sauce, soya sauce and schezwan sauce enhance the flavor of this dish. One can use variety of noodles for this recipe. I prefer to use Ching’s Hakka Noodles.

Step by Step Recipe of Veg Schezwan Noodles:

  • We need below to make schezwan noodles.
  • Heat water in a large vessel. Once it starts boiling, add noodles.
  • Boil until noodles are cooked.
  • Once cooked, drain the water. Pour cold water to stop cooking process. Smear oil and keep aside.
  • Heat Wok on a high heat. Add oil. Once hot, add finely chopped onions.
  • Saute a bit then add ginger garlic paste.
  • Saute onions for 5 minutes. Add chopped cabbage.
  • Saute and mix cabbage well. Cook a little bit and then add carrots.
  • Saute again. Later add bell pepper.
  • Saute and mix well. Now add soya sauce and vinegar.
  • Mix well and add tomato chili sauce or tomato ketchup.
  • At this point, add schezwan sauce.
  • Mix well and saute for few minutes. Add boiled noodles.
  • Combine everything well and check for salt and other sauces. Add as required.
  • Garnish with spring onion greens.

Ingredients
  • 250 gm Ching's Hakka Noodles
  • 1 tbsp Oil
  • 1 tbsp Ginger Garlic paste
  • 1 large Onion finely chopped
  • 2 cups Cabbage shredded
  • 1 Carrot grated
  • ¼ Bell Pepper chopped lengthwise
  • 1 tsp Soya Sauce
  • 1 tsp Chili Sauce
  • 1/2 tsp Vinegar
  • 1 tbsp Tomato Chili Sauce
  • 2 tbsp Schezwan Sauce
  • Salt per taste
  • ¼ cup Spring Onions Greens
How-To
  1. Finely chop all veggies and keep aside.

  2. Heat water in a large vessel. Once it starts boiling, add noodles.

  3. Boil until noodles are cooked. Once done, drain the water and wash with cold water to stop cooking process. Smear oil and keep aside.

  4. Now heat oil in a Wok.

  5. Once hot, add finely chopped onion and saute.

  6. Once onion is little bit cooked, add ginger garlic paste. Saute again until raw smell goes away.

  7. Now add veggies one by one. First add cabbage and mix.

  8. Then add carrots followed by bell pepper.

  9. Mix and cook well.

  10. Now add soya sauce, vinegar, chili sauce, tomato sauce, schezwan sauce and combine everything well.

  11. At this point, add boiled noodles and mix again.

  12. Check for salt. Add salt and other sauces if required.

  13. Garnish with spring onion greens and serve hot.
