Palak Pulao, is an aromatic Spinach flavored Rice recipe with array of vegetables. This Indian style rice preparation is absolutely delicious. Pulao/Pulav is a healthy rice dish prepared with basmati rice, vegetables and seasoned with whole spices. Spinach Rice is an enhanced version of pulao with goodness of spinach greens. Addition of spinach puree gives beautiful color and flavor to this dish.
We love to incorporate spinach in our meals be it curry, dal or rice. As we all know spinach has tons of health benefits because it’s rich in nutrients. Some of the recipes I have shared with palak are Palak Paneer and Palak Dal.

Instead of cooking rice with veggies, you can add cooked rice to the veggies. If you don’t have enough vegetables listed in the recipe, you can still make it with just palak puree (Blanched spinach puree) and onions.

Step by Step Recipe of Palak Pulao:
- Wash and soak Basmati Rice for 20 min.
- Chop vegetables in small pieces. Wash and soak for 10 mins. Then drain water using strainer.
- Heat ghee and oil in a big vessel. Once hot, add bay leaf. Then add finely chopped onions and saute.
- Once onions are cooked well, add chopped tomatoes and salt.
- Meanwhile, blanch spinach and make puree.
- Once onions and tomatoes are cooked, add vegetables and mix well.
- Now add palak puree and mix again.
- Add yogurt to the mix and combine well.
- Sprinkle some biryani pulao masala.
- Drain the water from soaked rice and add this rice to the mix.
- At last, add water and mix well. Taste once and if required add salt.
- Let it boil until rice is fully cooked. Serve hot with raita.
Palak Pulao is a flavorful and aromatic Indian Rice preparation made with spinach puree and vegetables.
- 2 Palak bunch
- 1 Onion finely chopped
- 2 Tomatoes finely chopped
- 1 Bay leaf
- 1 tbsp Oil
- 2 cup Mixed Vegetables chopped
- 1+1/4 cup Rice
- 1/4 cup Yogurt
- 1 tbsp Shahi Biryani Masala
- 3 cups Water
- 1 tsp Sugar
- Salt per taste

Wash and soak rice for atleast 20 minutes.

Meanwhile chop vegetables and wash.

Heat oil and ghee in a big vessel. Add bay leaf.

Then add finely chopped onions, Saute and cook.

Later add tomatoes and salt. Cook until it becomes mushy.

Now add chopped vegetables and mix.

Blanch spinach and make smooth puree.

Add spinach puree and then add yogurt. Mix everything well.

Drain water from soaked rice and add rice to the vegetable gravy.

Add Shahi Biryani Masala and water. Add salt if required.

Bring it to boil and cook until rice is fully cooked.

Serve hot with raita and papad.
- You can choose any vegetables of your choice.
- Instead of cooking rice with vegetables, you can cook veggies separately and add cooked rice to it.
