Being born and brought up in Mumbai, I am die-hard fan of Vada Pav. Vada is a spicy fried potato dumpling which is served with chutneys and pav/bread. I have already shared recipe of Batata Vada. Here I am sharing step by step recipe of how to assemble Vada Pav.
It is a famous street food of Mumbai which now has a global reach. It’s very simple to make and tastes heavenly when served hot. Unlike Samosa, potato stuffing does not contain any spices(masala) or peas etc. The right consistency of gram flour batter makes perfect crispy vadas.
Street vendors add their own variation sometimes such as urad daal or garlic in the potato mixture but basic recipe remains same. Also various chutneys like dry garlic chutney, green chutney, sweet chutney etc are used while serving vadas..
Vada pav is a popular Mumbai street food. It is prepared by placing fried potato dumpling inside pav along with chutneys.
- 2 Batata Vadas
- 2 Pav (Bread)
- 1 cup Green Chutney
- 1 cup Date Tamarind Chutney
- 1 cup Dry Garlic Chutney
- 1 Chopped Onion (optional)
- 3-4 Green Chilies (Deep fried)

Prepare vadas using recipe of Batata Vada.

Slit the pav in half. Apply chutneys as desired.

Place vada and close the pav.

Serve hot with additional chutneys, chopped onion and fried green chilies.

- Prepare vadas using this recipe – Batata Vada
- Now slit the pav in half and apply following chutneys – Green chutney, Date-Tamarind Chutney, Garlic chutney.
- The amount of chutney can be varied depending on one’s taste.
- Now place one potato dumpling and close the pav.
- Serve hot with fried green chilies and chutneys of your choice.
