In Maharashtrian cuisine, side dish is must in every meal. It can be pickle, papad, chutney, koshimbir, pakoras or all of the above. Koshimbir is nothing but a healthy salad with tempering. There are variety of side salads; onion tomato, carrot tomato, cucumber, beet to name a few. 

Carrot Tomato Koshimbir is made with raw carrots and tomatoes. It’s then seasoned with spices and tempering. I have tried to make it like my mom does. She makes the best Gajar Tomato Koshimbir in the world.

This side salad tastes awesome with Amti (Maharashtrian Daal) Bhaat (Rice) or Chapathi (Indian Whole Wheat Flat Bread). You can find the recipe of Amti here.

It is a healthy salad made with raw carrots and tomatoes. It's served as an accompaniment to rice or chapati.

Ingredients
  • 2 Carrots grated
  • 1 Tomato chopped
  • 1 tbsp Oil
  • 1 tsp Sugar
  • 1/4 tsp Mustard Seeds
  • 2 tsp Peanut Powder
  • 1 tbsp Cilantro finely chopped
  • Salt as per taste
How-To
  1. In a bowl; add grated carrot, chopped tomato, salt, sugar, chilli powder and peanut powder.

  2. Now in a small pan, add oil. Once hot, add mustard seeds.

  3. When mustard seeds start to crackle, add in turmeric and switch off the flame.

  4. Pour this tempering on the carrot tomato mixture.

  5. Add in some chopped cilantro and mix well.

  6. Our quick, spicy and yummy koshimbir is now ready.
