Bhel Puri is a flavorful snack which falls under Indian Chaat category. It’s a popular Mumbai street food made with puffed rice and vegetables. It requires no cooking and can be made in a jiffy. Think of it as a salad only tastier. Bhel is served with Puris/Papdis which are flat discs made with all purpose flour. Just like other chaat dishes like sev puri, it is seasoned with chutneys to enhance flavor. You can find the links for sev puri and chutneys here:
Bhel is a great choice for potlucks. You can keep puffed rice in one bowl, vegetables in another bowl and chutneys in separate bowls. That way, guests can make when needed and it won’t become soggy. In addition to regular ingredients, you can add peanuts, raw mango, boiled potatoes etc.
Below is my version of this humble recipe. It is simple and above all gluten free, low-fat and vegan.
Step by Step Recipe of Bhel Puri:
- In a bowl, add 4 cups of puffed rice, sweet chutney, green chutney, chopped onion and tomato. In addition to above, sprinkle some chaat masala.
- Add savory mixture (farsan) and finely chopped coriander.
- Mix well with spoon. Adjust quantity of chutney per your liking. For instance, if you want it to be spicy add more green chutney.
- Garnish with sev and coriander. Sprinkle some lemon juice and serve.

- 4 cups Puffed Rice
- 1 medium Onion finely chopped
- 2 small Tomatoes finely chopped
- 1/4 cup Savory Mix
- 1/4 cup Date Tamarind Chutney
- 2 tbsp Green Chutney
- 1/2 tsp Chaat Masala
- 1/8 cup Coriander leaves finely chopped
- 7-8 Puris

In a bowl, mix puffed rice, onions, tomatoes, Sweet Chutney, Green chutney and chaat masala.

Now add in savory mix, chopped coriander and mix well with spoon.

If needed, add more chutneys and savory mix.

Serve bhel with puris.
Notes:
- Additionally you can add boiled potatoes, peanuts, raw mango etc.
- Once made, serve immediately otherwise it becomes soggy.
