Upkari in Konkani cuisine is a vegetable stir fry; usually seasoned with coconut. Coconut is widely used in konkani dishes in the form of gravy or shredded. Beans Upkari is a green beans stir fry with a tempering of mustard seeds and dry red chilies. It’s very simple to make and goes well with daalithoy (Konkani Daal) and rice.
You can make a variation by adding potato to it. Other than beans, upkari can be made with vegetables like cabbage, cashew, potato etc.

Beans Upkari is a beans stir fry. It can be served as side dish with daal rice in Konkani Cuisine.
- 1 cup Green Beans
- 1 tsp Oil
- 1/2 tsp Mustard Seeds
- 1-2 Dry Red Chilli
- 1 tbsp Coconut grated
- 3-4 Curry Leaves
- Salt as per taste

Heat oil in a pan. Once hot add mustard seeds.

When mustard seeds start to splutter; add curry leaves, red chillies and pinch of asafoetida.

Add chopped beans in the tempering and mix well. Saute for 2-3 minutes.

Now add water and salt. Cover and cook for 7-8 minutes. Switch off the flame when beans are little cooked but still crunchy.

Mix in some grated coconut and cook for a 1-2 minutes.

Serve hot with daal and rice.
