Vegetable Sandwich is a popular and tasty roadside snack in Mumbai. It can be served as breakfast or evening snack. This easy and quick recipe is ideal for lunch box.
Basic veggies used are potatoes, tomatoes and onions. In addition to that, you can use beet, carrot, lettuce etc. White bread can be substituted with Brown bread for healthy version. Optionally you can add cheese slice/shredded cheese to make it ‘Veg Cheese Sandwich’. It is generally served with Green Chutney or tomato ketchup.

Vegetable Sandwich is a simple breakfast snack made with basic vegetables and bread.
- 12 slices White Bread/Brown Bread or your choice of bread
- 2 Boiled Potatoes sliced
- 2 Tomatoes sliced
- 1 Onion sliced
- 1 Cucumber thinly sliced
- 1/4 cup Butter
- 1 tbsp Chaat Masala as per taste
- 1/4 cup Tomato Ketchup for serving
- 1/4 cup Coriander Chutney for serving
- Cheese optional

Trim the edges of bread slices and keep aside.

Boil potatoes and thinly slice them.

Slice tomatoes, onions and cucumber.

Spread the butter on the bread slices.

Apply coriander chutney and sprinkle some chaat masala.

Place all the vegetable slices one by one.

Make single or double layers as per liking.

Cut them into 4 square pieces.

Serve with tomato ketchup and green chutney.
- Replace white bread with brown/multi-grain bread for healthy version.
- Chutney can be made fresh or in advance. Similarly, potatoes can be boiled in advance.
- Butter should be soft and at room temperature.
- Any vegetable of your choice can be added, such as carrots or beet.
- Bread can be lightly toasted on griddle if required.

- Gather required vegetables, bread, butter and green chutney.
- Thinly slice all the vegetables and keep aside.
