Veg Frankie is a popular street food in Mumbai, India. We used to get really tasty and flavorful frankies in our college canteen. It’s a great snack to munch on any time of the day. Frankie comes in a variety of flavors like veg cheese frankie, schezwan frankie, paneer frankie etc.
Frankie is a wrap/roll made with all purpose flour and stuffed with vegetables/sauces/meat etc. It is roasted on the griddle/tawa to make flaky and crispy. While making at home, wheat flour or multigrain flour or mix of all purpose and wheat flour can be used to make chapati for roll. It can be customized with any vegetables or sauces etc.
It is easy to make and can be perfect for kid’s lunchbox.
Below is my version of making simple veg frankie :
Veg Frankie is a wrap stuffed with vegetables and sauces.
- 1/2 cup All purpose flour
- 1/2 cup Wheat flour
- 1/4 cup Water or as required
- 1 tbsp oil
- Salt
- 4-5 medium Potatoes boiled and mashed
- 1/2 tsp Turmeric
- 1 Green chilly finely chopped
- 1/4 cup Coriander finely chopped
- 1/4 tsp Red Chilly Powder
- 1/4 tsp Cumin Coriander Powder
- Salt
- 1 stick Butter or as required
- 1 cup Tomato Sauce/Ketchup
- 1/2 cup Cabbage shredded
- 1/2 cup Onion thinly sliced
- 1/2 cup Carrot grated
- 1/2 cup Capsicum thinly sliced
- 1/2 cup Cheese grated
- 1/4 tsp Chaat Masala

Peel and mash boiled potatoes.

Add turmeric, red chilly powder, chopped green chillies, coriander, salt and cumin coriander powder.

Mix really well. Potato mixture is now ready. Make oval shaped patties and keep aside.

In a bowl, mix wheat flour and all purpose flour. Add salt, oil and water. Knead well and keep aside.

After some time, divide the dough in small portions. Roll each one into thin small circle.

Lightly cook all rotis on griddle and keep aside.

Take a roti. Apply butter and tomato sauce.

Place one potato patty in the center. Sprinkle some chaat masala. Add raw cut veggies on the top.

Now fold the roti and secure with a toothpick.

Heat the griddle. Add some butter and roast the folded roti nicely until crisp.

Fold at one end and wrap in aluminium foil. Serve hot immediately with ketchup or chutney.

Repeat the above steps to make more frankies.
- Instead of making rotis from scratch, leftover chapatis, parathas or tortillas can be used to make frankies.
- You can use any vegetables and sauces of your choice.
- Potato patty can be roasted to make it little crispy.
- If you don't like raw vegetables, slightly saute and add.
Step by Step Recipe for Veg Frankie :
- Peel and mash the potatoes. Chop all the veggies. Knead and keep the dough ready.
- Mix all the ingredients for potato filling.
- Divide the dough into small round balls. Flatten each ball to make 6″-8″ rotis. Lightly cook rotis on the griddle and keep aside.
- Now that chapathi and potato mixture are ready; you can make frankie using below ingredients.
- If using leftover roti/paratha/tortilla, start from this step. Apply butter and tomato sauce on the roti.
- Make a patty out of potato mixture and place at the center.
- Now add chopped veggies generously.
- You can add some shredded cheese on top.
- Now wrap the rotis and secure with toothpicks. Roast these wraps nicely on the griddle using butter until crisp.
- Fold one end of the roll and wrap aluminium foil around it. Serve immediately with ketchup or chutney. Mayonnaise can be added to enhance the flavor.
