Whenever my MIL comes to stay with us in USA, she prepares lot of traditional konkani dishes. Although most of her recipes are easy to prepare, they are healthy and taste great. Upkari is a Konkani word for simple stir fry. I have shared one such recipe earlier – Green Beans Upkari. It’s one of the highest visited recipes on my blog. Similarly Beetroot Upkari is a simple beet stir fry served as a side dish with hot steamed rice and curry in a Konkani household.
Beetroot, commonly called as Beet is a Calorie rich food which is consumed raw, boiled or cooked. In this recipe, beet is first pressure cooked and then seasoned with tempering. I usually take out water from cooked beet and mix it in my toddler’s rice. Needless to say, she loves her beautiful looking Pink Rice 🙂
Step by Step Recipe of Beetroot Upkari:
- Peel and wash beet. Chop them lengthwise into thin small pieces.
- We need below ingredients as shown.
- Pressure cook chopped beet with water for 4-5 whistles until properly cooked.
- Heat oil in a pan. Add mustard seeds. Once they crackle, add hing, red chili and green chili.
- Add boiled beet, salt and grated coconut. Mix well and saute.
- Serve as a side dish with any meal.
Beetroot Upkari is a simple and healthy stir fry made with beet.
- 2 Beetroot (Beet)
- 2 tbsp Grated Coconut
- 2 tsp Oil
- 1/4 tsp Mustard Seeds
- 1 pinch Hing
- 1 Green chili
- 1 Red Chili
- 1 cup Water

Peel and wash beet. Chop them into thin small lengthy pieces.

Pressure cook chopped beet with little water for upto 5 whistles.

Heat oil in a pan. Add mustard seeds. Once they crackle, add hing, green chili, red chili.

Now add boiled beet, salt and grated coconut.

Mix well and saute. Serve as a side dish with any meal.
