Ambya Humane is a sweet, tangy and spicy curry of mangoes. Mango is a National fruit of India and it’s available abundantly during Summer. There are ample varieties of mangoes; Hapus, Payri, Dasheri, Langra etc. Hence you will find tons of dessert recipes with the same. One of the popular one from Konkani cuisine is ‘Ambya Humane’.
Traditionally, small locally grown mangoes are used for this recipe. They have fibrous pulp and soft skin. But in USA, I couldn’t find these mangoes, so I have used a different variety. My MIL also adds mango seed (goitha) in the curry.
Even though it’s a dessert, it is seasoned with tempering, which is what makes it unique. Thus, it can also be served with chapathi or rice. You can check my other Konkani dry curries such as:
The recipe is extremely simple. Let’s see the step by step instructions.
Step by Step Recipe of Ambya Humane:
- We need below ingredients.
- Heat oil in a pan. Once hot, add mustard seeds and let them crackle. Then add slit green chilies, red chili and urad dal.
- Add curry leaves and asafoetida.
- Now add mango pulp along with pieces, seed and mix with the tempering.
- Add jaggery and salt.
- Let it cook for 5-6 minutes. Then turn off the heat.
- Serve as desired.
A sweet, spicy, tangy curry of mangoes.
- 2-4 Mangoes
- 1 tsp Urad Dal
- 1 tbsp Oil
- ¼ tsp Mustard Seeds
- ⅛ tsp Asafoetida
- 7-8 Curry leaves
- 1 Green Chili slit vertically
- 1 Red Chili
- ¼ cup Jaggery

Wash and peel mangoes. If you have small mangoes, you can use them as whole. If you can't find small mangoes, cut them into pieces.

Leaving few pieces, make the pulp or blend them to make a pulp.

Heat oil in a pan. Add mustard seeds and let them crackle.

Then add urad dal, green chili and red chili.

Then add asafoetida and curry leaves.

Add the mangoes pulp and mix well.

Later add jaggery and salt.

Let it cook for 5-6 minutes.

Serve as desired.
