When I got married into Konkani Household, I was introduced to plethora of Pakoras or fritters (bajje). Although any vegetable can be used to make pakoras/pakodas, Cauliflower Pakora are my favorite. They are crunchy and taste delicious especially when hot. We usually have them with Daal Rice.
Fritters are deep fried snack made with vegetables marinated mainly with besan (gram flour) and spices. They make a great team time snack or serve as a side dish to any meal. The recipe is simple and yields crispy and light pakoras.

Step by Step Recipe of Cauliflower Pakora:
- Take one cup of cauliflower florets. Wash them thoroughly and keep in a bowl.
- Add red chili powder, turmeric and salt. Mix well.
- Add rice flour and besan (gram flour). Toss the florets and mix well.
- Adding little bit water at a time, try to coat florets with flour. If required add more water and flour. Keep aside for 15 minutes.
- Heat oil in a kadhai for deep frying. Once hot, add marinated florets one by one.
- Fry until brown and crispy. Make sure cauliflower is cooked from inside as well.
- Serve hot and enjoy!
Deep fried light and crispy fritters made with cauliflower florets, besan and spices.
- 2 cup Cauliflower Florets
- 2 tsp Red Chili Powder
- 1/4 tsp Turmeric
- 1/4 cup Besan (Gram Flour)
- 2 tbsp Rice Flour
- 3-4 tbsp Water
- 1/2 tsp Salt

Cut small florets from a cauliflower. Wash them thoroughly. Keep in a bowl.

Add red chili powder, salt, turmeric and mix well.

Now add rice flour, besan and toss the florets.

Adding little bit of water and if required flour, coat the florets completely.

Keep aside for 15 minutes.

Heat oil in a kadhai. Once hot, add florets one by one.

Fry until crispy and golden brown. Remove on paper towel.

Serve hot with ketchup or as is.
