Beetroot Cutlet or Beet Tikki is a delicious, healthy snack prepared with beetroot, potatoes and some spices. Since Beetroot is a main ingredient, it gives great color to these cutlets. Recipe is quite simple and does not involve many ingredients.
These cutlets are soft and tender from inside because of the soft filling of beetroot and potatoes. At the same time, these are crispy from outside as they are coated with semolina and pan fried. You might also add onions, carrots etc. if you like. I use all purpose flour in the recipe but you can add corn flour or roasted gram flour instead.

Step by Step Recipe of Beetroot Cutlet:
- We need below ingredients to make this cutlet.
- In a bowl, add grated beetroot and boiled mashed potatoes.
- Then add boiled green peas to the mixture.
- Now add maida, salt, chopped coriander, ginger green chili paste and cumin coriander powder.
- Finally add bread crumbs and combine well.
- Make heart shaped patties out of the mixture by using heart shaped cutter.
- Coat them with semolina.
- Heat oil a pan. Shallow fry cutlets on medium flame from both the sides.
- Serve with ketchup or mint-coriander chutney.
Easy, healthy snack prepared with beetroot and potato
- 1 medium Beetroot
- 2 Potatoes
- 2 tbsp Green Peas boiled
- 2 tbsp Maida/Cornflour
- 2 tbsp Breadcrumbs
- 2 tbsp Coriander leaves finely chopped
- 1 tbsp Cumin Coriander Powder
- 1-2 tsp Ginger Green Chili Paste
- ¼ cup Semolina
- ¼ cup Oil
- Salt

Peel and wash beetroot. Grate beetroot and keep aside.

Boil potatoes and mash them.

In a bowl, add grated beetroot, boiled and mashed potatoes, boiled green peas.

Then add finely chopped coriander, cumin coriander powder, all purpose flour, ginger chili paste, salt and mix.

Now add breadcrumbs and combine well.

Take small amount of mix and using heart shape cookie cutter prepare tikkis.

Prepare all cutlets in same way and coat them with semolina.

Heat little oil in a pan. Shallow fry tikkis from both sides and serve with ketchup or chutney as desired.
These are normally coated with semolina as described above but you can even skip coating it altogether if you want. You can just shallow fry these like aloo tikkis. You can also coat these with breadcrumbs. Either shallow fry or deep fry the cutlets.
