Karathe Sasam is a fried bitter gourd curry with coconut masala.
Wash bitter gourd and chop them into small pieces
Add chopped pieces into pan. Saute and cook until brown.
Add few drops of oil in between and fry again until crispy.
In a blender jar, add grated coconut, green chili, tamarind and grind into a smooth puree.
Take out fried karathe in a bowl. Add ground coconut puree, salt and mix well.
Heat little oil in a small pan. Crackle mustard seeds and add hing.
Pour this tempering over bitter gourd and coconut mix. Adjust consistency by adding little water.
Serve as a side dish with rice.
